We wrap the cut cheese only in waxed paper and use brown paper tape to seal the edges.

The self-adhesive paper labels are from a local printers.

Using waxed paper is much better than plastic/ vac-packing for storing the cheese as it allows it to 'breathe' and retain its texture and flavour.

When delivering large orders it is frequently necessary to transport whole cheeses in large re-usable plastic bags but we send cheeses in cardboard boxes whenever possible.

What's the difference between Single and Double?

In a nutshell; the Double is matured twice as long as the Single.

The Single takes 8 weeks to mature and the Double, 3 months.

The Single is creamy and buttery with a fresh citrus finish.

The Double has a firmer texture, full bodied with a nutty, complex flavour.

Traditionally, the Single would have been used as part payment to farm workers, as it is quick and easy to produce. The Double was the cheese that was sent to markets and shops for people to display on their dinner tables, hence the added colour (in the past:carrot juice, now: annatto bean)  for the 'wow' factor.
